Deep-Dish Chocolate Chip Cookie for One

Ingredients (1 serving)

  • 1 Tbsp unsalted butter, at room temperature
  • 1/2 Tbsp unrefined granulated sugar, such as evaporated cane juice
  • 1/2 Tbsp packed light brown sugar
  • 1 Tbsp beaten egg, preferably organic (cover & chill remaining beaten egg for tomorrow’s cookie cup… you will be making another one!)
  • tiny splash pure vanilla extract
  • 2 1/2 Tbsp whole wheat pastry flour (can substitute with 3:1 of cake flour and all purpose flour)
  • 1/8 tsp baking soda
  • tiny pinch salt
  • heaping 1 Tbsp grain-sweetened chocolate chips, such as Sunspire

Instructions

In a small ramekin or microwavable cup, combine softened butter and both sugars; stir well with a spoon. Stir in beaten egg and vanilla extract. Stir in flour, baking soda, and salt just until combined. Stir in chocolate chips.

Microwave on high for 35-40 seconds. Let cookie rest at room temperature for about 10 seconds before devouring.

So I met this beautiful girl. Well, it’s kind of a funny story. Her name is Jordan (you can follow her here). We knew one another through Tumblr for quite sometime, actually, and it is here we first met. I wish I could elaborate on how we actually went about physically meeting, seeing as we lived over 1300 miles away from each other. It’s a really funny and almost unbelievable story. Needless to say, everything was so unexpected. I never thought it a million years I would meet a girl on Tumblr and fall madly in love with her. But God is such a marvelous orchestrator, let me tell you. I’ve fallen so very hard for her, and I’m blessed enough to see her nearly every weekend now. I literally have no idea how I made it through life without her in it before. Though our time together is short, it’s so very precious and I wouldn’t trade it for a single thing. She is definitely an example of better things to come, and I love her so much. You may have noticed this is “our” blog now, which is super exciting for us. Well, it’s been awhile since I’ve actually sat down and wrote you guys. Life has been one crazy ride lately to say the least. Thanks for sticking around and sending constant encouragement. We literally read every single message we receive. Well, now you’re filled it.
